KFC Fakeaway

KFC fakeaway. One word - delicious. 


KFC chicken fakeaway with sweet potato chilli wedges, sour cream & guacamole. 

recipe for KFC Chicken:

2 large chicken breasts (or cuts of chicken of your choice)
4 slices of 400g wholemeal bread
1 teaspoon oregano
1 teaspoon chilli powder
1 teaspoon ground sage
1 teaspoon basil
1 teasppon pepper
2 teaspoons salt
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon garlic salt
2 eggs

Method:
Slice the chicken breasts into mini fillets or to the size of your liking
Blitz the bread until fine breadcrumbs in a blender.
Put into a bowl and add all of the seasonings and mix until everything is blended together to create your coating.
Crack the eggs and mix together.
The chicken needs to be dipped in the egg and then to the breadcrumb mixture and repeated to get an even coating.
Bake the chicken in the oven for 20-25 mins on a medium heat, until cooked through.
Cut one of the thickest bits to make sure it is cooked in the middle.

Crustless Quiche & Blancmange.


Yesterday I made both of these. 

Crust less quiche:

6 eggs
1 tub of cottage cheese
Any veg you want just cook it off. 
used:
Mushrooms
Peppers
Shallots
Tomatoes
Spring onion
Also cooked off some bacon with all fat removed

Then just add all ingredients to a quiche dish or if you don't have one like I didn't, I just used a pie dish. 

Cook for approx 30mins or until golden brown. 

Enjoy. 

As for the blancmange, simply take one of the jelly sachets (I used raspberry) mix with 1/2 pint if boiling water, add two muller lights (I used raspberry & cranberry) and then put in moulds to set. 

So easy and less than half a syn each (I got 4 out of mine)

Sweet Chilli Chicken Stir Fry

That was my tea tonight. 

So simple

Noodles, it's upto you if you use syns on them or not. 

Chicken. I popped some chilli flakes in with the chicken to give it the kick. 

Any veg you want. I opted for one of the pre packed stir fry vegs you can get. 

Make sure your chickens cooked then pop in your veg and noodles cook for 3-4 mins then chuck in your sauce (sweet and sour in my case) and then cook for 1 min and you're done!

So easy and so tasty!

Overnight Oats


Giving this a go for tomorrow!

Frozen fruit of your choice
Muller light of your choice
35g of oats (healthy B choice)

Layer together and leave overnight

Simple.

Saturday Night Feast

Saturday night and I'm just about to enjoy a massive plate of veg with chicken using the tikka spice from my chicken tikka massala.

First Week's Results!

2.5lb loss in 4 days

I'm happy with that, it shows it does work. Here's to a full week on plan with no meals pre paid anywhere!




Weigh Day

So today is Weigh Day, safe to say i'm not looking forward to it already!
Seeing as I only properly started this diet on Monday, due to pre paid meals and what not (for peoples birthdays) last weekend, its safe to say I haven't seen the full benefits as yet.

That's not to say I havent enjoyed it because I have!
I made a Chicken Tikka Massala last night for us both, and it was so tasty!
I will take photos and do a proper blog about that one next time! I always forget as I usually can't wait to just eat!

About Me

Hi my names Alison.

I'm 25, and i've finally decided to give Slimming World a go.
I signed up on 12/03/2015 with an aim to lose 2st 10lbs. I didn't set a time limit because I feel it's added pressure I don't need.
I would be one of the first to say I never needed a slimming group to lose weight, and I was right.

I managed to lose 3 stone on my own and last year completed the Manchester 10k, raising £2,000 for Ovarian Cancer Action.


Since then I have managed to put on 2 out of the 3 stone and am back to having no confidence yet not knowing where to start to start losing the weight again.


Many people have told me about the pro's about Slimming World and i'm going to use this blog to share my favourite recipes and my progress.
