Syn Free Chilli

I need to learn how to portion properly! Massive portion of chilli on a tiny jacket, but it was all Syn free, 4.5 syns for the crisps!

Comfort food


Chicken, mash, mushrooms and carrots. Only syns were for the peppercorn sauce which was 2 syns and then milk from my allowance. Yum!

Motivational Monday

2009-now. The slowest journey ever but I'm getting there!

I only really started giving a crap in March last year when I finally signed up to Slimming World and currently 8lbs from my target then I'll re access where I want to be.

Salt and Pepper chicken

Better than a Chinese! And only 2 syns for a massive portion!



Recipe is in a previous post but here you go for ease:

This was amazing.

Ingredients 

Chicken breast, cut into chunks 
Plain flour (25g is 4 syns) 
Salt & Pepper 
Garlic granules 
One egg, whisked 
Fry Light 

A pepper, thinly sliced 
An onion, thinly sliced  
Soy sauce 
White wine vinegar 
Sweetener 

Method 

Preheat oven to approx 180 degrees.
 
Combine Four tablespoons of flour in a bowl (25g is 4 syns), with half a teaspoon of salt and half a teaspoon of pepper, along with half a teaspoon of garlic granules. 

In another bowl, whisk your egg and add a splash of soy sauce to season. 

Pop your chicken chunks in the egg and then in the flour mix. 

Once this is all done, arrange on a nonstick baking tray, sprayed with some Fry Light first. 

Then spray the chicken with Fry Light - this will help it to brown. 

If you're using the oven, leave the chicken for 15 minutes, and turn over, and then give it another spray of Fry Light and then give it another 10 minutes, or until golden. 

When the chicken is on the second round of cooking, in a non-stick pan, gently soften your peppers and onion. 

I'd add a splash of soy sauce for extra flavour. 

Once everything is soft add your cooked chicken from the oven. 

Mix together two teaspoons of sweetener with two tablespoons of white wine vinegar and stir until the sugar has dissolved. 

Add this to the pan and stir on a gentle heat. 

This will be quite dry, as Salt & Pepper chicken is, but that vinegar/sugar mixture really makes the dish. 

Taste and add some further salt and pepper if it needs it. 

The only syns are for the flour - I used 25g so 4 syns and 2 of us had it so was only 2 syns each! could easily divide between 4 and make it 1 syn per portion!

Syn Free Quiche

I made the quiche at the start of SW but I wasn't a fan. Tried a different recipe last night so hoping I'm a fan of this as it's a fab way to get all your speedy veg etc. 

Ingredients:

Syn free cheese and Chive fat free cottage cheese
3 eggs
Onions
Peppers
Tomatoes
Mushrooms

Weigh Day Nerves

I'm currently the same weight I was on 28/12/15 having maintained at my last two weigh ins. Safe to say, another maintain this week would be gutting! 

Speedy soup, hex b bread, and some snacks to see me through!

Syn Free Bolognese


One of the things I love most about slimming world is that you can modify any recipe to make it syn free or very low in syns. We used to use a jar of sauce but my boyfriends managed to perfect a perfectly syn free bolognese and I definitely don't mind synning the Parmesan cheese on top. I love it!

Trying new things.

I've always said I didn't like weetabix, but after enjoying the brownies I thought I'd give them a go and I was pleasantly surprised. Just shows how much your tastes change when on SW as I could quite happily have these everyday now! Easy breakfast using hex a and hex b. Would probably have them on an SP day though so I can still have another a and b choice!

Got my head back in the game after another maintain. This might not be 1/3 speed food but it's a better choice than my other option, the takeaway! 

4 syns for the mayflower curry sauce, everything else was free. And bloody lovely!

3 Stone & Worlds Apart


Time hop has got a habit of showing me some truly awful pictures at the moment. The photo on the left was me at uni, a size 18 and almost 16 stone. I thought I was happy and I had a good time, I'd never deny that. 

Fast forward a good few years and I'm over 3 stone lighter and I feel like I've got a new life. I'm not 100% comfortable with how I look yet but I'm a lot closer to it! 

11lbs to the target I first set myself, and then I'll reassess :)

Lunch Time

Lunch time!

Used the SW Tikka Sauce and some chicken in the slow cooker and then chucked in onions and peppers for the last hour, I was pleasantly suprised at how tasty and easy this was to make! Will definately be using my slow cooker a lot more to batch cook and stay on plan!

Sunday Night Chills

Just remembered that I hadn't had my hex B so I chucked together some biscuits using my oats allowance and had a lovely brew.

Good & Counted Range

There are a number of low syn crisps out there but the range that the Good & Counted ones have is fab.
Theyre approx 4.5 syns a bag and worth it! there are more flavours than just these but these are the newest one I am trying!
They have pretzels, crisps & savoury popcorn.

I would highly recommend, I got a pack of 6 from asda for just £1!

Finding My Feet

So last night I maintained. I was a little gutted but then I remembered I lost the 2 weigh ins over Christmas. So I'm happy!
I'm back on plan now..

Made the BBQ Pulled Gammon but didn't want to mix it into the sauce after shredding it. So played up the gammon with the veg and sauce on the side and some sweet potato chips. Counting 4 syns for the perinaise but didn't even eat it all! Lovely day on plan!

Beanies Coffee

I get bored quite easily when it comes to hot drinks so I love trying new flavours.
I would highly recommend Beanies Coffee to anyone, I got these as a Christmas Present, the Chocolate Mint one is amazing and definately my favourite out of the 3, and SYN FREE.

Gingerbread Oat Cookies

I have made it my aim to mix up how I use my Hex B, so I'm not just having bread or hifi bars all of the time.

These Gingerbread Oat Cookies were super easy to make and just used my Hex B or 6 syns for the lot if you don't want to use your Hex B on them!

Recipe as follows:

35g Porridge Oats
1 egg
3 tbsp sweetener
1tsp mixed spice
1tsp ground ginger
1/2tsp ground cinnamon

Mix together and spoon into 5 portions - bake at 200 degrees for approx 25 mins - they are 1.2 syns each (I round up to 1.5 for ease, or free if using your HEX B)

Spaghetti Carbonara



This is a recipe I have never tried, I saw it near the start of my journey but the lack of cheesy sauce and what not worried me. I don't even know why because I was pleasantly suprised with how nice this dish was!
It can be found on the website or in the new book the new members will recieve / the book we were given if we attended over Christmas!

the only syns are for the Parmesan and I can live with 1/2 syn per portion!! This recipe serves 4 so even if you had the whole lot it would only be 2 syns!

Slimming World Gifts



I made some little gifts for my SW Consultant and the Social Team - or extended family as I refer to them :)

Coconut Macaroons / Lemon Cake Pops / Cinammon Swirls - 25 syns per box for the big ones and 15 syns for the smaller ones. Loved making these and just shows you can still have treats and be well within your syns!

NEW YEAR!

New Year, New Goals!

I re arranged my certificates and added the ones I had forgotten about, the first step to being back on plan and in the right frame of mind!
I'm back to just under 2 stone loss after my gain at the start of December, but I am determined to get to my target (-11 lbs) by my birthday in June, which is totally doable and I will most likely lower it a litle more but we shall see!
What are your goals for the year?
