Chicken & Doner Kebab Fakeaway

So since Thursday night all I've thought about is tonight's tea. 

I used the BFree Pitta as my B choice and it was 3.5 syns for the Garlic Mayo but everything else was prepped using syn free methods!

 

Ingredients for Doner Meat:
1tsp dried oregano
1tsp dried herbs
1tsp garlic powder
1tsp onion powder
1/2tsp cayenne pepper
1tsp salt
1tsp black pepper
500g extra lean beef mince 

Method:
Combine all ingredients
Shape into a loaf and place on baking tray
cook in oven (180c) for 1 hour, turning over half way through
Remove from oven and wrap in foil, leave for 10 minutes to rest

To make the Tandoori Chicken:
Combine Natural Yoghurt with the juice of half a lime add some tandoori powder then marinate chicken and leave in the fridge for a few hours to marinate. 

Then place under grill until cooked - turning half way!

The carrot chips were just placed in the oven with a sprinkle of paprika whilst the doner meat was cooking I usually cook them for approx 40 mins. 

Absolutely stuffed and feeling great that I've only used 3.5 syns for all of that. It really felt like I was having a takeaway!

Chicken & Tomato Soup

I'm finally at a stage where I feel I can make up my own recipes. I used to try to make soups but I didn't know what worked with what and it always tasted horrible. But last night I made a lovely fruity tasting tomato soup and then added some shredded chicken from Iceland just to bulk it out a bit and make it more filling.

To make the soup:
2 cans of chopped tomatoes
1 can of sliced carrots
2 stock cubes & approx 1 pint of water
frozen onions
1 carton of passata

Simply heat all the above and then blitz, I then added salt and pepper and a sprinkle of Paprika then threw in the shredded chicken that was frozen (pre cooked) from Iceland, I'd taken it out to defrost earlier so it was ready to add.

June Goals


Here we are. I'm hoping that by posting them online and making them public it will mean I'm more likely to give it my all and actually aim for them. It seems to have been a good while since I can honestly say I've given it 110% every single day so I'm hoping this month I can. They're all targets I can achieve if I set my mind to it. I just need to take it a day at a time if needs be.

Weigh Day


Lost 2.5lb tonight. Still gutted it wasn't more but what can you do?! Had a good week on plan, and going to be on plan until lunch on Tuesday then it's off to Frankfurt until Thursday afternoon so not quite sure how next week is going to go. I'd be delighted with a maintain if possible but we shall see!

Lemon Sorbet

My latest addiction. Lemon Sorbet. Or basically a lemon cheesecake muller chucked in the freezer. Didn't fancy a proper breakfast this morning so thought I'd have a sorbet and blueberries. Lovely and refreshing. Might try the strawberry cheesecake muller when I pick some more up. Would highly recommend.

Subway Salads

Subway salads have my approval. I've finally got round to trying one. I went for the chicken tikka one (doubled my meat) and didn't have sauce and it was completely syn free. I'm not a salad person so it was nice to be able to pick exactly what I liked instead of a load of salad that I wouldn't eat.

Bangers and Mash

So I had a craving for sausage and mash but I didn't want to over do it with the carbs so decided to improvise.

Ingredients
2 SW Sausages - syn free
Swede - syn free
Small Mash - counting 1 syn for the little bit of milk
Gravy - counting 2 syns
Salt and Pepper to taste.
Onion Rings - syn free

To make the onion rings I simply sliced an onion, dipped in egg and then coated in smash then popped in the oven for approx. 20 mins.

Such an easy meal to throw together and it feels like a massive plate of comfort food which is always good.

Slow Cooker Chilli

Slimming world, slow cooker chilli for tea last night. So easy and so yummy and full of speed veg and completely Syn free. Woo!

So easy to do, I just added 5% mince, onions, peppers, passata, chopped tomatoes, garlic, cumin, chilli powder, paprika, 1 beef stock cube, 1 tin of baked beans

Will most likely get a minimum of 4 BIG portions out of this, or 6 smaller ones for using with a jacket etc

Low Syn Treats!

Love getting to late at night and realising I've only had 1.5 syns! Indulged in an Options Caramel (1.5), Jam Hifi Bar (3) and a Goodies Muller Yog (2.5) whilst we watched some Person Of Interest last night ❤️

Food Diaries

Chicken & Tomato Soup



For anyone interested in this here is the recipe...

You will need:-

1 onion, peeled and finely chopped
1 red pepper, diced
2 large skinless and boneless chicken breasts, cut into thin strips
800g canned chopped tomatoes
400ml chicken stock - I used 3 stock cubes to make sure it was relatively thick
1 tbsp chopped rosemary
1 tbsp crushed chillies
2 tbsp. tomato puree
Finely grated zest and juice of 1 lemon
Salt and freshly ground black pepper

Method:-

Place the onion and pepper in a large non-stick saucepan and stir-fry for 4-5 minutes.
Add the chicken, tomatoes, stock, rosemary and lemon zest, chillies and juice.
Bring to the boil, stir, then cover and simmer on a medium heat for 20 minutes, stirring occasionally.
Season to taste and serve

This recipe is completely syn free and so tasty!

Pancakes!

😍😍😍 I like that my boyfriend can make pancakes because I fail miserably. The pancakes aren't SW friendly but the toppings are :) 

I've had a big blow out this week so thought I'd have a treat!


Then I wanted more so I made some Syn free pancakes 😍😍😍

A bit of hindsight...


I spent a lot of time at the start of my journey comparing myself to others and feeling deflated. 

It took me a while but now I know the only comparison that matters is that between me before and me now.

Stuffed Peppers


One of those days when I couldn't decide what I wanted the other night so used two massive peppers. Stuffed them with some speed veg and Syn free doner from the weekend. Topped with hex A cheese and then chucked some tikka chicken on the side. Weird and wonderful concoction :).

Trying new things.

I've always said I didn't like weetabix, but after enjoying the brownies I thought I'd give them a go and I was pleasantly surprised. Just shows how much your tastes change when on SW as I could quite happily have these everyday now! Easy breakfast using hex a and hex b. Would probably have them on an SP day though so I can still have another a and b choice!

Tomato Soup

I seem to change the Heinz Tomato Soup SW Recipe everytime I make it, I've added extra passata and tomatoes this time to make it even more tomato-ey, and it's still completely syn free and lovely for when the weathers crappy like today!
