Speedy Soup
Made this yesterday. It doesn't give how much of each to add, so add as much as you like, but would definately recommend it. Just had it for lunch.
I put 2 red onions, 1 white onion, 5 celery sticks, 1 tin of tomatoes, 1 tin of sliced carrots and then the rest. Could easily have chucked more in but didn't want to waste veg if I didn't like it

Comfort food
Chicken, mash, mushrooms and carrots. Only syns were for the peppercorn sauce which was 2 syns and then milk from my allowance. Yum!

Motivational Monday

Salt and Pepper chicken
Better than a Chinese! And only 2 syns for a massive portion!
Recipe is in a previous post but here you go for ease:
This was amazing.
Ingredients
Chicken breast, cut into chunks
Plain flour (25g is 4 syns)
Salt & Pepper
Garlic granules
One egg, whisked
Fry Light
A pepper, thinly sliced
An onion, thinly sliced
Soy sauce
White wine vinegar
Sweetener
Method
Preheat oven to approx 180 degrees.
Combine Four tablespoons of flour in a bowl (25g is 4 syns), with half a teaspoon of salt and half a teaspoon of pepper, along with half a teaspoon of garlic granules.
In another bowl, whisk your egg and add a splash of soy sauce to season.
Pop your chicken chunks in the egg and then in the flour mix.
Once this is all done, arrange on a nonstick baking tray, sprayed with some Fry Light first.
Then spray the chicken with Fry Light - this will help it to brown.
If you're using the oven, leave the chicken for 15 minutes, and turn over, and then give it another spray of Fry Light and then give it another 10 minutes, or until golden.
When the chicken is on the second round of cooking, in a non-stick pan, gently soften your peppers and onion.
I'd add a splash of soy sauce for extra flavour.
Once everything is soft add your cooked chicken from the oven.
Mix together two teaspoons of sweetener with two tablespoons of white wine vinegar and stir until the sugar has dissolved.
Add this to the pan and stir on a gentle heat.
This will be quite dry, as Salt & Pepper chicken is, but that vinegar/sugar mixture really makes the dish.
Taste and add some further salt and pepper if it needs it.
The only syns are for the flour - I used 25g so 4 syns and 2 of us had it so was only 2 syns each! could easily divide between 4 and make it 1 syn per portion!

Syn Free Quiche
I made the quiche at the start of SW but I wasn't a fan. Tried a different recipe last night so hoping I'm a fan of this as it's a fab way to get all your speedy veg etc.

Weigh Day Nerves
I'm currently the same weight I was on 28/12/15 having maintained at my last two weigh ins. Safe to say, another maintain this week would be gutting!

Syn Free Bolognese
One of the things I love most about slimming world is that you can modify any recipe to make it syn free or very low in syns. We used to use a jar of sauce but my boyfriends managed to perfect a perfectly syn free bolognese and I definitely don't mind synning the Parmesan cheese on top. I love it!

Trying new things.
I've always said I didn't like weetabix, but after enjoying the brownies I thought I'd give them a go and I was pleasantly surprised. Just shows how much your tastes change when on SW as I could quite happily have these everyday now! Easy breakfast using hex a and hex b. Would probably have them on an SP day though so I can still have another a and b choice!

Got my head back in the game after another maintain. This might not be 1/3 speed food but it's a better choice than my other option, the takeaway!

3 Stone & Worlds Apart
Time hop has got a habit of showing me some truly awful pictures at the moment. The photo on the left was me at uni, a size 18 and almost 16 stone. I thought I was happy and I had a good time, I'd never deny that.
Fast forward a good few years and I'm over 3 stone lighter and I feel like I've got a new life. I'm not 100% comfortable with how I look yet but I'm a lot closer to it!
11lbs to the target I first set myself, and then I'll reassess :)

Tomato Soup
I seem to change the Heinz Tomato Soup SW Recipe everytime I make it, I've added extra passata and tomatoes this time to make it even more tomato-ey, and it's still completely syn free and lovely for when the weathers crappy like today!

Lunch Time
Lunch time!
Used the SW Tikka Sauce and some chicken in the slow cooker and then chucked in onions and peppers for the last hour, I was pleasantly suprised at how tasty and easy this was to make! Will definately be using my slow cooker a lot more to batch cook and stay on plan!
