I fancied burgers last night but I'd already had my Hex B choice so got some big mushrooms and used them as the 'bread', used the Mozzarella as my Hex A choice, and added some fried onions too. Absolutely lovely!

Comfort food
Chicken, mash, mushrooms and carrots. Only syns were for the peppercorn sauce which was 2 syns and then milk from my allowance. Yum!

Good & Counted Range
There are a number of low syn crisps out there but the range that the Good & Counted ones have is fab.
Theyre approx 4.5 syns a bag and worth it! there are more flavours than just these but these are the newest one I am trying!
They have pretzels, crisps & savoury popcorn.
I would highly recommend, I got a pack of 6 from asda for just £1!

Lemon Drizzle Cake Pops
Ingredients
- 2 lemons
- 5 eggs
- 45g granulated sweetener
- 50g self raising flour
8 syns for the recipe and it made 32 so I could have 4 for 1 syn/8 for 2 syns etc
Directions
- Add 30g of the sweetener and flour in a bowl
- Squeeze the juice of 1 lemon into the mix
- Using a hand grater, zest both lemons and add the zest to the mix
- Separate the egg yolks from the whites. Keep the whites aside, beat the yolks and add to the mixture
- Whisk the egg whites until they are fluffy and form soft peaks. Fold into the mixture
- Add to the cake tray
- Bake for 20-30 minutes on 180C until golden brown, allow to cool a little.

SW Meals - Review
I tried the Beef Saag and the Chicken Saag this weekend, and they were both lovely! I would definately recommend them and would love to try the recipes on the back! The meat just fell apart in the Beef one and the Chicken one wasn't too spicy either. Yum! Definately felt like a good fakeaway option!

Weekends & Not Being Well
Saturday was my hardest day this weekend, I really wanted to just eat rubbish because I felt rubbish. Even though I knew it wouldnt make me feel better. Instead I managed to throw together some pasta and meatballs and made enough for 3 portions which have already gone! Packed full of speed and thoroughly enjoyed it. Desperately want to be in the next stone range on Thursday! Got a zumba class tonight, first time for everything!

Mayflower Curry - Beef
My other half fancied a chinese beef curry, I have to say I was reluctant to make it as I don't often cook with beef but it was yummy! 4 syns each for the mayflower Curry Sauce but SO worth it! Everything else was free!

Cauliflower Cheese Soup
What you need:
Low calorie cooking spray
One chopped onion
Smoked paprika
Cauliflower florets
200ml vegetable stock
2-3 extra light cheese triangles
What to do:
1. Spray a large sauce pan with low calorie cooking spray and add chopped onion and smoked paprika and cook for 5 minutes.
2. Add cauliflower florets, around 200ml vegetable stock and simmer for 15 minutes until the cauliflower is just tender.
3. Stir in 2-3 extra light cheese triangles and blend until smooth. Season and serve.

SW coconut macaroons
I know they look more like meringues! But theyre still lovely!
Ingredients:
4 egg whites
198g sugar
71g coconut
Method:
Beat the egg whites until frothy (Make sure no yolk whatsoever has contaminated the egg whites, otherwise you could be whisking for ever!)
Add the sugar and beat until stiff.
Fold in the coconut, put mixture into a piping bag with a star nozzle and pipe 30 macaroons onto a parchment covered baking sheet.
Bake for 30 minutes in a preheated oven (170ºC/150ºC Fan/Gas Mark 3).
Remove from oven, and allow to cool for a few minutes before removing them from the baking sheet.

SW Beef Burgers
I was ridiculously skeptical about the quality of the SW Burgers especially when it said fry from frozen, but I was really suprised with them! They were lovely! My only comment would be that they were a little dry, but if you are putting relish etc on your burger then it is fine! Would definately buy these again!

Strawberries!
Snacking on SW has never been so easy. I live on strawberries a lot of the time which is awesome because they're a speed fruit. Got a new little gadget to slice them up from ebay for just over £1, bargain!

HeB choices!
I know a few people that can't justify spending £1.95 per box on the SW Hifi bars.
I feel like that some weeks too.
But these are amazing alternatives and only £1 a box at the moment too!
I haven't tried the banoffee or Jaffa cake ones yet but I hear they are to die for

SW meals
Nearly 4 months in so thought I'd finally give some of these meals a go. Tried the chicken tikka tonight and would highly recommend. It fed two of us easily and the chicken didn't taste like cardboard which is what normally puts me off ready meals! Would Definately get it again just to have one in the freezer for those days when you just don't have the time to prep a meal from scratch.
