Muller Light - Frozen!
I sometimes get bored of just eating a muller light, so thought I'd freeze it in a mould. As they're only small I managed to get 30 of these out of one yoghurt! So easy!

Italian Chicken & Tomato Soup
This recipe is freezer friendly too!
Ingredients
1 onion peeled and finely chopped
2 carrots peeled and grated
2 lean back bacon, all fat removed, cut into small pieces
2 chicken breasts cut into thin strips
600g chopped tomatoes
400ml chicken stock
1tbsp chopped rosemary
Finely grated zest and juice of 1 lemon
Salt & pepper to taste
Parsley to garnish
Method
Place the onion, carrots and bacon in a saucepan and stir fry for 2-3 mins.
Add chicken, tomatoes, stock, rosemary and lemon zest/juice.
Bring to boil and cover then simmer on medium heat for 15 mins stirring occasionally. Season to taste and sprinkle with chopped parsley then serve.

Pasta Bake
Wholemeal pasta
Chopped tomatoes
Passata
Red onion
Shallots
Peppers
Ham
Worcester sauce
Oregano
Chilli flakes
Garlic granules
HEX A portion of Cathedral City Light.
6 syns for the cheese if not using as HEX A.
Chuck it all in a dish and in the oven for about 25 mins or until golden brown.
Easy!

Syn Free snacking
Cinnamon pancakes, muller light & an apple!
recipe for the pancakes:
6 tbsp sweetener
1 tsp vanilla essence
1 egg (makes 2 pancakes)
Seperate egg yolk & whites into seperate bowls.
add 3 tbsp sweetener to egg white, whip until you get stiff peaks.
add vanilla and rest of sweetener to egg yolk and mix well.
I add some cinammon at this point, as much or little as you like.
fold the egg yolk into the egg white mixture.
spray pan with fry light and pour half the mixture into pan, leave a minute then flip.
repeat for 2nd pancake.
Syn free snacking!

Chocolate Orange Squares
4 eggs, separated
50g caster sugar
5 tbsp artificial sweetener
150g self raising flour
1 tsp baking powder
2 tbsp finely grated orange zest
Juice of 2 oranges
120g Kraft chocolate Philadelphia
Tin of mandarin oranges (drained of syrup)
Method
Preheat the oven to 190°C/170°C Fan/Gas 5. Line a cake tin with non-stick baking parchment, approximately 24cm x 17cm.
Place the egg yolks, caster sugar, sweetener, self raising flour, baking powder, orange zest and juice in a bowl and whisk until thick and pale.
In a separate bowl, whisk the egg whites until softly peaked then fold them into the egg yolk mixture.
Spoon this mixture into the prepared cake tin and cook in the oven for 25-30 minutes or until the cake has risen and is firm to touch. Leave to cool.
Warm the chocolate Philadelphia in the microwave for a few seconds, then turn the cake upside down, remove the baking parchment and spread the chocolate Philadelphia over the top.
Cut into 24 pieces and place a mandarin orange segment on the top of each square.

I had a sweet tooth and just one of these squares is enough for me but at 2.5 syns each you can definately have another if you need to!

Sunday dinner
My usual Sunday dinner used to consist of a meat, loads of mash made with milk and butter, hardly any veg and 2 or 3 Yorkshire puds with a load of gravy.
Today consisted of chicken topped with pepper, some sweet potato and then cabbage, cauliflower & carrots with a bit of gravy and I loved it so much! The only syn was for the gravy.

Perseverance
I almost quit before I'd really started.
I was ill my first two weeks with a chest infection. But today I finally got my half a stone award and I feel amazing.
3.5lbs off. Just shows if you stick at it you'll get there. Don't give up.

1/2 Syn Brownies
Extra Easy Syn Value:- 1/2 each
You will need:
6 eggs (separated)
70g Splenda (or other sweetener)
60g cocoa powder (not hot chocolate)
1tsp vanilla essence
Fry Light
Method:
Preheat the oven at 180Âșc, spray a baking tin with Fry Light
Line with greaseproof paper
Whisk the egg whites until they form soft peaks.
In a separate bowl add the egg yolks, sweetener, vanilla essence & cocoa
Whisk until mixed but you can add a bit of water if the mixture is too stiff
Then fold in the egg whites
Pour the mixture into the tin
Bake for 25-30 minutes
makes 25 brownies.

Double Burger with Cheese & Bacon
I used my HE A for the cheese & HE B on the roll, and synned some extra cheese.
Basically, used 250g of the 5% fat mince, added a chopped up onion (can use shallots) and a clove of garlic chopped up.
I would advise adding some herbs/spices as it was a little bland, but it's as simple as that.
combine these ingredients in a bowl then split into two and make two burgers out of it.
season them both with salt and pepper.
spray with fry light and then grill for approx 5-6 mins on each side.
Added bacon with all fat removed & cheese, in whatever order you like.
It was a lovely burger but I definately feel like adding some chilli flakes or just some more seasoning would have helped massively.
