Weetabix Cake

I've seen a few different variations going round of a Weetabix Cake so finally decided to give one of them a go as I'm getting bored of using my B choice on the same things.
This recipe is for 2 B choices so half of the cake is your B choice for the day or if your doing SP you could have it all. There is also 7 syns worth of dried fruit (50g) so 3.5 syns per half.

Ingredients
4 weetabix
1 muller light
50g dried fruit
2 eggs
1 tbsp of sweetener (optional)

Method
crush Weetabix into fine powder
add muller light of your choice (I used banana and custard)
add eggs and sweetener and combine then add dried fruit and stir through
put into loaf tin and cook for 20 minutes
I then turned it over and cooked a further 20 minutes as it looked soggy
leave to cool then slice and serve.


Half of the cake is your B choice + 3.5 syns

Half A Syn Sausage Rolls!


I am far too excited to devour a plate full of these at Taster tonight, and the best thing...
THEY'RE HALF A SYN EACH!!!

They are beautiful and will definitely be made again, in massive batches so I can live off them over the Christmas period and not feel guilty!

They are from the new Festive Feasts book that is available in groups this week, I got mine free with the Countdown Offer last month at group. I can't wait to try some other recipes from this book especially if they are as good as these!!

Low Syn Chocolate & Sweets

I know a lot of people struggle with low syn treats, even more so near halloween when they're EVERYWHERE so I thought i'd post this. I bought these 2 bags today from ASDA to stock up my syn drawer and worked out all the syns. I could have my own little feast and still be within my syns! Hope these help!

Syn Free Pancakes

it's come to my attention that I don't seem to have ever posted the syn free pancake recipe that I use!

Here you go... I've also included some other recipes that seem to be popular!



 I use option one!

Option 1: Syn Free / No Healthy B usage

Recipe:
Makes 2 pancakes

6 tbsp sweetener
1 tsp vanilla essence
1 egg
Fry Light

Method:
1. Whisk egg and sweetener in a bowl until you see soft peaks forming.
2. Stir in vanilla essence and mix well
3. Spray a pan with frylight
4. Pour half the mixture into a frying pan and fry for about 3 mins each side.
5. Serve with a topping of your choice



Option 2: Syn Free with Hex B usage

Recipe:
Makes 4 pancakes

35g porridge oats (organic are nicer in my opinion)
1/2 muller light yoghurt (vanilla or banana custard are the job!)
2 eggs
2 tbsp sweetener (candarel or such, granulated)
Frylight

1. Mix the porridge oats and frylight and leave in the fridge overnight. They need time to - quite literally - bond :)
2. The following day, whisk two eggs with the sweetener until you are seeing soft peaks forming. add to the oat mixture
3. Spray a pan with frylight, and pour about 1/2 of the mixture into the pan. Fry for 4-5 mins each side.



OPTION 3: 2.5 syns per pancake
Makes 2 pancakes:

1 banana
Pinch of cinnamon
2 eggs
Frylight


1. Mash the banana (5 syns as it is mashed)
2. Whisk two eggs until you are seeing soft peaks forming. Add your pinch of cinnamon
3. Spray a pan with frylight, and pour about 1/2 of the mixture into the pan. Fry for 1-2 mins each side. Repeat!

Nescafe Mint Mochas

Found these in my local ASDA and needed a new hot chocolate to try. Love them! Synning them at 4.5 syns as they aren't on the app yet but would highly recommend!

Mayflower Curry - Beef

My other half fancied a chinese beef curry, I have to say I was reluctant to make it as I don't often cook with beef but it was yummy! 4 syns each for the mayflower Curry Sauce but SO worth it! Everything else was free!

Cauliflower Cheese Soup

What you need: 

Low calorie cooking spray 
One chopped onion 
Smoked paprika 
Cauliflower florets 
200ml vegetable stock 
2-3 extra light cheese triangles 

What to do: 
 1. Spray a large sauce pan with low calorie cooking spray and add chopped onion and smoked paprika and cook for 5 minutes. 
 2. Add cauliflower florets, around 200ml vegetable stock and simmer for 15 minutes until the cauliflower is just tender.    
 3. Stir in 2-3 extra light cheese triangles and blend until smooth. Season and serve.

Curry Loaf

Ingredients:

1 tin of asda chickpea dhal (free)
1 packet asda curry flavour rice (1 1/2 syns)
3 eggs whisked
diced onions and peas (optional)

Method:

Cook the rice as per instructions
Mix all the ingredients together
Bake in a lined loaf tin or as muffins on 180 for about 30 mins until golden

1 1/2 syns for the lot
I got 8 small and 6 large muffins out of this mixture.

Chocolate Orange Squares




4 eggs, separated
50g caster sugar
5 tbsp artificial sweetener
150g self raising flour
1 tsp baking powder
2 tbsp finely grated orange zest
Juice of 2 oranges
120g Kraft chocolate Philadelphia
Tin of mandarin oranges (drained of syrup)


Method
Preheat the oven to 190°C/170°C Fan/Gas 5. Line a cake tin with non-stick baking parchment, approximately 24cm x 17cm.

Place the egg yolks, caster sugar, sweetener, self raising flour, baking powder, orange zest and juice in a bowl and whisk until thick and pale.

In a separate bowl, whisk the egg whites until softly peaked then fold them into the egg yolk mixture.

Spoon this mixture into the prepared cake tin and cook in the oven for 25-30 minutes or until the cake has risen and is firm to touch. Leave to cool.

Warm the chocolate Philadelphia in the microwave for a few seconds, then turn the cake upside down, remove the baking parchment and spread the chocolate Philadelphia over the top.

Cut into 24 pieces and place a mandarin orange segment on the top of each square.

I had a sweet tooth and just one of these squares is enough for me but at 2.5 syns each you can definately have another if you need to!

1/2 Syn Brownies

Extra Easy Syn Value:- 1/2 each

You will need:


6 eggs (separated)
70g Splenda (or other sweetener)
60g cocoa powder (not hot chocolate)
1tsp vanilla essence
Fry Light

Method:
Preheat the oven at 180Âșc, spray a baking tin with Fry Light
Line with greaseproof paper
Whisk the egg whites until they form soft peaks.
In a separate bowl add the egg yolks, sweetener, vanilla essence & cocoa
Whisk until mixed but you can add a bit of water if the mixture is too stiff
Then fold in the egg whites
Pour the mixture into the tin
Bake for 25-30 minutes
makes 25 brownies.
