Cheese & Crackers

9 syns of heaven. 6 syns for the crinklys and 0.5 syns for each of the cheese blocks (they are the laughing cow ones that come in a variety of flavours) this felt like such a treat. And seeing as I hadn't had any syns up to this point it was well within my allowance! Silverskin onions added for speed! :)

So i've been looking at different ways to use my syns that satisfy my sweet tooth. Here's some really useful infographics that Slimming World have provided to show you don't have to go without!


Need to get back into it properly and i'm really struggling at the moment as I feel like i'm getting bored so hopefully mixing things up will help.

Lemon Drizzle Cake Pops

Ingredients

  • 2 lemons
  • 5 eggs
  • 45g granulated sweetener 
  • 50g self raising flour


    8 syns for the recipe and it made 32 so I could have 4 for 1 syn/8 for 2 syns etc

Directions 

  1. Add 30g of the sweetener and flour in a bowl 
  2. Squeeze the juice of 1 lemon into the mix 
  3. Using a hand grater, zest both lemons and add the zest to the mix 
  4. Separate the egg yolks from the whites. Keep the whites aside, beat the yolks and add to the mixture
  5. Whisk the egg whites until they are fluffy and form soft peaks. Fold into the mixture
  6. Add to the cake tray 
  7. Bake for 20-30 minutes on 180C until golden brown, allow to cool a little.

Chicken & Tomato Soup

This recipe is freezer friendly too!

Ingredients

1 onion peeled and finely chopped
2 carrots peeled and grated
2 lean back bacon, all fat removed, cut into small pieces
2 chicken breasts cut into thin strips
600g chopped tomatoes
400ml chicken stock
1tbsp chopped rosemary
Finely grated zest and juice of 1 lemon
Salt & pepper to taste
Parsley to garnish

Method
Place the onion, carrots and bacon in a saucepan and stir fry for 2-3 mins. 
Add chicken, tomatoes, stock, rosemary and lemon zest/juice. 
Bring to boil and cover then simmer on medium heat for 15 mins stirring occasionally. Season to taste and sprinkle with chopped parsley then serve.


Perfect for those wintery days where you want something more substantial than just soup!

Herbal Tea



I got the clipper tea in my slimmer of the week box and it's absolutely gorgeous! Would highly recommend. 

The 2nd one is peppermint tea, I have to say I've started having these instead of proper brews. It's a great way to have a hot drink without using all your milk allowance!

Strawberries!

Snacking on SW has never been so easy. I live on strawberries a lot of the time which is awesome because they're a speed fruit. Got a new little gadget to slice them up from ebay for just over £1, bargain!
having them with yoghurt & a sprinkle of cinammon is one of my favourite snacks. And all free!

Snacking

It's easy to stay on track when you get to snack on things like this, a simple bowl of oranges, strawberries & a muller light cheesecake inspired yoghurt (1 syn) but worth it!

Curry Loaf

Ingredients:

1 tin of asda chickpea dhal (free)
1 packet asda curry flavour rice (1 1/2 syns)
3 eggs whisked
diced onions and peas (optional)

Method:

Cook the rice as per instructions
Mix all the ingredients together
Bake in a lined loaf tin or as muffins on 180 for about 30 mins until golden

1 1/2 syns for the lot
I got 8 small and 6 large muffins out of this mixture.

HeB choices!

I know a few people that can't justify spending £1.95 per box on the SW Hifi bars. 

I feel like that some weeks too. 

But these are amazing alternatives and only £1 a box at the moment too! 

I haven't tried the banoffee or Jaffa cake ones yet but I hear they are to die for

You can have 2 as your HeB or they are 3 syns each!

Syn Free snacking

Cinnamon pancakes, muller light & an apple! 

Syn free snacking! 

Who said eating fruit was boring?





recipe for the pancakes:
6 tbsp sweetener
1 tsp vanilla essence
1 egg (makes 2 pancakes)

Seperate egg yolk & whites into seperate bowls.
add 3 tbsp sweetener to egg white, whip until you get stiff peaks.
add vanilla and rest of sweetener to egg yolk and mix well.
I add some cinammon at this point, as much or little as you like.
fold the egg yolk into the egg white mixture.
spray pan with fry light and pour half the mixture into pan, leave a minute then flip.

repeat for 2nd pancake.

Chocolate Orange Squares




4 eggs, separated
50g caster sugar
5 tbsp artificial sweetener
150g self raising flour
1 tsp baking powder
2 tbsp finely grated orange zest
Juice of 2 oranges
120g Kraft chocolate Philadelphia
Tin of mandarin oranges (drained of syrup)


Method
Preheat the oven to 190°C/170°C Fan/Gas 5. Line a cake tin with non-stick baking parchment, approximately 24cm x 17cm.

Place the egg yolks, caster sugar, sweetener, self raising flour, baking powder, orange zest and juice in a bowl and whisk until thick and pale.

In a separate bowl, whisk the egg whites until softly peaked then fold them into the egg yolk mixture.

Spoon this mixture into the prepared cake tin and cook in the oven for 25-30 minutes or until the cake has risen and is firm to touch. Leave to cool.

Warm the chocolate Philadelphia in the microwave for a few seconds, then turn the cake upside down, remove the baking parchment and spread the chocolate Philadelphia over the top.

Cut into 24 pieces and place a mandarin orange segment on the top of each square.

I had a sweet tooth and just one of these squares is enough for me but at 2.5 syns each you can definately have another if you need to!
