Salted Caramel Loaf

8 syns for all of it so 1 syn a slice when cut into 8 :) 

Ingredients:
50g self raising flour
10g sweetener
4 eggs
2 caps of salted caramel flavouring

Method:
Separate eggs. 
Add the flour, sweetener and salted caramel flavouring to the egg yolk. 
Whisk the egg white until stiff and fold into the mixture. 
Add to mould and bake on 160 for 25 mins. 
Leave to cool then slice.

Low Syn Chocolate Cake

Ingredients:
4 eggs
1-2 teaspoons vanilla extract
1 tbsp of Sweetener
3 Options Choc Orange Sachets (6 syns)
Method:
Preheat over to 185°C (fan)
Spray a little Frylight in a loaf tin and line with greaseproof paper
Separate the eggs and in one bowl, mix the egg whites until they form soft peaks.
In another bowl, mix the other ingredients together – the eggs yolks, sweetener, vanilla and cocoa. You may find the mixture a little stiff so it’s OK to add a little splash of water at this stage.
Fold in the egg whites, a little at a time.
Pour mixture into your tin.
Bake for 25-30 minutes.

Salted Caramel Loaf Cake

I have previously posted this recipe but thought it worth re posting as I tried it again but this time doubled up the flour to make it more cake like.

Ingredients:

100g self raising flour
4 eggs
Salted caramel flavouring
1 tbsp Sweetener

 

Method
Separate eggs
Combine the egg yolks, sweetener, salted caramel and flour
Whisk the egg whites into firm peaks
Fold in the egg whites
Cook for approx 25 mins or until golden brown
Enjoy

The whole cake is 16 syns so if you slice it into 8 each slice would be two syns etc. Please adjust syn amount to suit your slices.

Obviously it will never be as amazing as a full fat million syns a slice cake but I think it's a good substitute!

Low Syn Treats



Another one of the Photo Challenge pictures for this month is titled 'Low Syn Treats' so I thought i'd pick my top 9.
I've picked ones you can make rather than buy and I will post a link to each recipe.

1. Chocolate Orange Squares - Each piece is 2.5 syns. I haven't made these for ages but I think I need to, just been looking through my camera roll and completely forgot about these little gems!

2. Coconut Macaroons - Admittedly these look more like Meringues but they are still yummy and I love making these, I make them a lot for tasters as they're a huge hit at only 1 syn each!

3. Cinnamon Swirls - Easily one of my favourites. 1 syn each and worth every bit of it!


4. Lemon Cake Pops - These are simply the Lemon Loaf Cake recipe make into cake pops, I find it a lot easier to snack on and you feel like you're eating more!

5. Half A Syn Cake - Admittedly if you're a newbie I think you'll be disappointed with this if you're expecting an incredible Victoria-esque sponge, but if you've been doing the plan a while and struggling with your sweet tooth I think it's definitely a good substitute!

6. Low Syn Chocolate Cake - Similar to the above, they certainly don't put Mary Berry to shame but they're a means to an end and at 10 syns for the WHOLE cake, you can hardly complain!

7. Ombré Jelly Slice - 3 syns for this entire thing. I love it, especially in summer. You can add 1.5 syns for another layer if you like, it's easy enough to experiment with and the flavours can easily be changed!

8. Salted Caramel Loaf Cake - I amended the Lemon Loaf cake recipe and made it into a Salted Caramel one so really I could have posted them together but oh well here goes!

9. Last but not least, the Fake Jelly Sweets - These are 1.5 syns for the whole lot! I ended up portioning them up into 3 so I could sit watching TV and know I was only using half a syn munching on these!

I definitely want to try some new ones, there's probably a heap more that I could have included but I thought i'd just share some old and some new ones that I've found really useful in keeping me on plan!

A Whole Cake For 0.5 Syns



1 tub of quark
4 eggs, seperate whites and yolks
5 tablespoons of sweetener
1 teaspoon of baking powder
1 teaspoon of vanilla exptract
Fruit of your choice to decorate

Method


1. Whisk egg whites till stiff
2. In another bowl mix yolks , vanilla baking powder half of the quark and 4 tablespoons of sweetener
3. Add half of egg white mixture and whisk some more. Fold in the rest of the egg white
4. Pour mixture into a lined tin.Bake in a preheated oven gas mark 4 for 20-25 mins or until cooked (approx 180degrees)
5. Mix the other half of quark with remaining sweetener an use to spread on cake when it is cooled.
6. Top with loads of fresh fruit

Christmas Cake

I have always been a firm believer that I wasn't a fan of Christmas Cake, but the cake in the new Festive Feasts book from group looked really good... so I gave it a go! And it was amazing! I have had cake for breakfast everyday this week... So I'm not holding out hope for a loss tomorrow! I would recommend this AND I think its worth the 5.5 syns per slice! I've had half a dozen taste testers so far and every single one of them has approved! (I have brutally honest friends so I know they're being honest) I need to make another one already and I only made it on Monday Night!!! Taking the rest of this for group to sample tomorrow and then need to look at making another this weekend, there will definitely be a few of these consumed over the festive season!

Everyone Loves Cake!

So Saturday night was awesome. My friend made a sin free lasagne and I loved it! I then made some more of this salted caramel cake as well as a chocolate orange version so we could both keep on track! I even took my own measured milk so I didn't go over!

Carrot Cakes

So in my attempt to be as on plan as possible when I can, I made a batch of the carrot cakes I posted a few weeks ago. Definately a favourite of mine and it's great that this dessert was just 3 syns

Each cake is 1.5 syns, the syns are just from the flour used. There's probably a way to lower the syns but I'm not going to argue with 1.5 syns for a lovely little cake!

Chocolate Orange Squares

Apologies for the lack of posting, I batch cooked a few things last weekend so I haven't really had any new recipes to post about. SO! Here's an oldie that I love, and I definitely need to make again soon...



4 eggs, separated
50g caster sugar
5 tbsp artificial sweetener
150g self raising flour
1 tsp baking powder
2 tbsp finely grated orange zest
Juice of 2 oranges
120g Kraft chocolate Philadelphia
Tin of mandarin oranges (drained of syrup)


Method
Preheat the oven to 190°C/170°C Fan/Gas 5. Line a cake tin with non-stick baking parchment, approximately 24cm x 17cm.

Place the egg yolks, caster sugar, sweetener, self raising flour, baking powder, orange zest and juice in a bowl and whisk until thick and pale.

In a separate bowl, whisk the egg whites until softly peaked then fold them into the egg yolk mixture.

Spoon this mixture into the prepared cake tin and cook in the oven for 25-30 minutes or until the cake has risen and is firm to touch. Leave to cool.

Warm the chocolate Philadelphia in the microwave for a few seconds, then turn the cake upside down, remove the baking parchment and spread the chocolate Philadelphia over the top.

Cut into 24 pieces and place a mandarin orange segment on the top of each square.

Spiced Carrot Muffins

These are called Passion Cake Muffins on the website not sure why seeing as there's no passion fruit etc in them! They're basically mini spiced carrot muffins and I'm amazed they're only 1.5 syns each!!


Ingredients

  • 3 medium eggs
  • 6 tbsp granulated artificial sweetener
  • 75g self-raising wholemeal flour
  • 2 tsp ground mixed spice
  • 175g grated carrot
  • 110g quark skimmed milk soft cheese
  • 1 tbsp granulated artificial sweetener
  • 1 tsp vanilla essence

If preferred, replace the mixed spice with ground ginger or cinnamon for a different flavour.


Method

  1. Preheat the oven to 180°C/160°C Fan/Gas Mark 4. Line eight deep muffin tins with paper cases. In a large mixing bowl, whisk together the eggs and 6tbsp artificial sweetener until pale, thick and frothy - the mixture should be thick enough to hold a trail from the beaters.
  2. Sieve in the flour and mixed spice, adding any husks that remain behind in the sieve. Add the carrot and, using a metal spoon, gently fold the ingredients together using a figure-of-eight action, taking care not to beat the mixture.
  3. Spoon into the muffin cases to fill them and bake for 20 minutes until firm and lightly golden. Set aside to cool in the tin.
  4. Meanwhile, make the frosting: beat together the quark, vanilla essence and 1 tbsp sweetener and chill in the fridge until required.
  5. To serve, spread some of the frosting over each muffin to decorate.



Next time I make these ill up the flour to 100g and make them two syns each I think! 


**EDIT** I made them again and used 100g flour which would make the recipe 16 syns. I then made smaller cakes (18) which would make them 0.88889 syns (rounded up to 1 for ease) and they looked like this...

Easter

So this weekend (or more since Friday) has been completely off plan, I've eaten out, drank alcohol, and scoffed my face on chocolate. I am expecting a gain there is no denying that but I have had a lovely weekend and am so glad I didn't deny myself what I wanted. It isn't every weekend that I go out and blow all my syns and more, so I will be completely happy with whatever happens come Thursday. I made these crème egg brownies for my other half, and ended up having FOUR pieces which was probably my weeks worth of syns straight away!!!

Ah well, worth every bite!

Low Syn Chocolate Cake


Obviously the one on the right above, I need to take a picture next time I bake it! Would highly recommend!

Ingredients:

  • 6 eggs
  • 1-2 teaspoons vanilla extract
  • 70g sugar substitute (eg. Splenda)
  • 60g cocoa powder

 

Method:

  • Preheat over to 185°C (fan)
  • Spray a little Frylight in a loaf tin and line with greaseproof paper
  • Separate the eggs and in one bowl, mix the egg whites until they form soft peaks.
  • In another bowl, mix the other ingredients together – the eggs yolks, Splenda, vanilla and cocoa. You may find the mixture a little stiff so it’s OK to add a little splash of water at this stage.
  • Fold in the egg whites, a little at a time.
  • Pour mixture into your tin.
  • Bake for 25-30 minutes.

Party Food

So we had a little gathering at my house last night, a girly night if you will. There was plenty wine and vodka jelly shots but at least the snacks were Slimming World friendly.

Lemon Loaf, Chocolate Cake, Syn Free Cake and a Syn Free Quiche, also had Shredded BBQ Chicken but I didn't get a photo before it was scoffed!

Lemon Loaf


Lemon Loaf made! 1 Syn per piece and lovely way to stay on plan.

Ingredients
•2 lemons
•5 eggs
•45g granulated sweetener (or just 30g if not having a glaze)
•50g self raising flour

Directions
1.Add 30g of the sweetener and flour in a bowl
2.Squeeze the juice of 1 lemon into the mix
3.Using a hand grater, zest both lemons and add the zest to the mix
4.Separate the egg yolks from the whites. Keep the whites aside, beat the yolks and add to the mixture
5.Whisk the egg whites until they are fluffy and form soft peaks. Fold into the mixture
6.Add to the cake tray
7.Bake for 20-30 minutes on 180C until golden brown, allow to cool a little.
8.Use the rest of the sweetener with a dash of water to make a paste to go on top as a glaze. I don't do this but it is upto you.

Taster Night


Brought my taster food to work with me in case I have to go straight to class because of traffic. Now trying to resist the urge to eat it all :(. 8 syns for allllll the chocolate cake and only 1 Syn per coconut macaroon. Torture!

Slimming World Xmas Party

A couple of pics from our celebratory party! The first is a very synful cake made by one of the guys in our group. Incredible!

The second is my Xmas jumper, a SIZE 12! My target size, now just need my target weight!

And the third is a comparison photo to remind myself just how far i've come. Last Thursday I knew I was going to gain, and I was fine, but then I started kicking myself about how I had sabotaged getting my target in time for xmas. And then timehop threw up the picture on the right. And it instantly made me realise how far i've come since that picture was taken. No matter how off plan I will be over Christmas, I know I won't get back to that, and whatever the damage is will be gone in January!

Merry Christmas everyone!

Lemon Drizzle Cake Pops

Ingredients

  • 2 lemons
  • 5 eggs
  • 45g granulated sweetener 
  • 50g self raising flour


    8 syns for the recipe and it made 32 so I could have 4 for 1 syn/8 for 2 syns etc

Directions 

  1. Add 30g of the sweetener and flour in a bowl 
  2. Squeeze the juice of 1 lemon into the mix 
  3. Using a hand grater, zest both lemons and add the zest to the mix 
  4. Separate the egg yolks from the whites. Keep the whites aside, beat the yolks and add to the mixture
  5. Whisk the egg whites until they are fluffy and form soft peaks. Fold into the mixture
  6. Add to the cake tray 
  7. Bake for 20-30 minutes on 180C until golden brown, allow to cool a little.

1/2 Syn Brownies

Extra Easy Syn Value:- 1/2 each

You will need:


6 eggs (separated)
70g Splenda (or other sweetener)
60g cocoa powder (not hot chocolate)
1tsp vanilla essence
Fry Light

Method:
Preheat the oven at 180ºc, spray a baking tin with Fry Light
Line with greaseproof paper
Whisk the egg whites until they form soft peaks.
In a separate bowl add the egg yolks, sweetener, vanilla essence & cocoa
Whisk until mixed but you can add a bit of water if the mixture is too stiff
Then fold in the egg whites
Pour the mixture into the tin
Bake for 25-30 minutes
makes 25 brownies.
